Classic Spaghetti Carbonara Recipe

Here for delicious carbonara.

Ingredients:

400g (14 oz) spaghetti
150g (5 oz) pancetta or guanciale, diced
3 large eggs
1-2 cup grated Parmesan cheese, depending on your taste
2 cloves garlic, minced
Salt and freshly ground black pepper to taste
Fresh parsley, chopped (optional for garnish)

Instructions:

Cook the pasta: Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
Cook the pancetta: While the pasta cooks, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 4-5 minutes. Add minced garlic and cook for another minute. Remove from heat.
Prepare the sauce: In a bowl, whisk together eggs, Parmesan cheese, salt, and black pepper.
Combine everything: Add the hot pasta to the skillet with pancetta. Remove from heat and quickly pour in the egg mixture, tossing rapidly to coat the pasta without scrambling the eggs. Add reserved pasta water a little at a time until you reach your desired sauce consistency.
Serve: Garnish with chopped parsley if desired. Serve immediately with extra Parmesan on top.
