Vegetable Stir-Fry with Tofu

Ingredients:

1 block (400g) firm tofu, drained and cubed
2 tablespoons soy sauce
2 tablespoons sesame oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 carrot, julienned
2 cloves garlic, minced
1 teaspoon grated ginger
2 tablespoons vegetable oil
1 tablespoon oyster sauce (optional for extra flavor)
Sesame seeds for garnish
Green onions, chopped (optional for garnish)

Instructions:

Prepare the tofu: Marinate tofu cubes in 1 tablespoon soy sauce for 10 minutes. In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high heat. Add tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
Cook the vegetables: In the same skillet, add the remaining vegetable oil. Add garlic and ginger; sauté for 30 seconds until fragrant. Add bell peppers, broccoli, and carrots. Stir-fry for 5-7 minutes until vegetables are tender but still crisp.
Combine: Return tofu to the skillet. Add remaining soy sauce and oyster sauce (if using). Toss everything together and cook for another 2 minutes.
Serve: Garnish with sesame seeds and chopped green onions. Serve hot over rice or noodles.
